I really want to try the famous chopped street food, Kottu Roti, but my spice tolerance is very low. Will they make it non-spicy if I ask?

Yes, but you have to be very clear. Ask for "No Chilli, No Pepper." If you just say "less spicy," it will still be quite hot by foreign standards. A great hack is to order "Cheese Kottu"—the melted cheese naturally cuts the heat and makes it creamy and delicious.

I ordered "no spice" and my mouth was still on fire. Buy a sweet King Coconut (thambili) drink from a street vendor to have next to you while you eat. It neutralizes the burn instantly.

Cheese kottu is life-changing. But beware, the chefs usually add a pre-made meat gravy while chopping it on the grill, and that gravy contains hidden spice. Remind them not to add spicy gravy.
