Is traveling in Sri Lanka safe for a Celiac (Gluten-Free)?
I have severe Celiac disease. Can I safely eat local Sri Lankan food, or is wheat flour hidden in the curries?

Sri Lankan food is a gluten-free heaven! Our staple diet is rice. Our curries are thickened with coconut milk, not flour roux. Hoppers and String Hoppers are made entirely from fermented Rice Flour. Just absolutely avoid the "Short Eats" (bakery items like vegetable rotis, rolls, and patties) as those are 100% wheat.
Also, soy sauce is very rarely used in traditional Sri Lankan cooking (we use salt and lime), so you don't have to worry about hidden gluten there like you do in East Asia.
Beware of "Kottu Roti". It is the most famous street food, but it is made by chopping up Godamba Roti, which is pure wheat flour. Stick to rice and curry and you will be completely fine.
