I have a sweet tooth and I keep encountering KITHUL treacle (a dark palm syrup drizzled on curd and sweets) and JAGGERY (the blocks of palm sugar) What are these palm syrups and sugars exactly (kithul vs coconut vs palmyra) how are they made what do I try them on (curd and treacle I have heard of) and can I buy good ones to take home and how do I tell the real thing from fake I want to understand these lovely local sweeteners Foodies and locals please tell me about kithul and jaggery

The curd and kithul treacle is the dessert to seek out the thick tangy buffalo curd in a little clay pot with the dark fragrant syrup poured over is unforgettable I had it after dinner most nights in the south do not leave without trying it many times
