Night markets or evening food spots that locals actually go to (not tourist-oriented)?
I want authentic local night food experiences. Where do Sri Lankans go in the evenings for street food?

Look for busy local 'short eats' shops and kottu places that open in the evening in residential or market areas, not the tourist promenades. In Colombo, areas like Borella, Wellawatte, or Pettah have spots locals use. In other towns, ask your guesthouse host where they go for evening snacks. These places often don't have English signs or menus but the food is usually excellent and cheap. Go with a local or use translation help. The experience is very different from tourist-oriented night markets.
The best local food spots are often the ones with plastic chairs on the pavement and a big crowd of regulars. They might not look fancy but the turnover means the food is fresh.
