We are staying at a tea estate homestay near Haputale. What traditional estate food should we ask our host to cook for us.

Estate food is distinct Tamil cuisine. Ask your host for plain Roti made on a wood fire griddle, paired with spicy Lunu Miris (chili onion paste) and a thick Dhal curry. Also, ask for Ulundu Vadai (lentil donuts) and spicy potato white curry. Since it is cold in the hill country, this heavy, spicy food is incredibly comforting.

The fresh estate black tea they serve with every meal is the best part of the experience.

Yes, many Hindu estate families are strictly vegetarian at home, but the flavors are explosive.

Ask them to make Wattalapam for dessert. It is a steamed jaggery pudding that is amazing.

Ask for Kothu Roti. Watching them chop it up on the metal plate is a show in itself.

Watch out for the spice level! "Local spicy" in the estates means absolute fire.
