I see pictures of crispy bowl-shaped pancakes with an egg in the middle. What are they and when do locals eat them?

Those are "Hoppers" (Appa in Sinhala). They are made from fermented rice flour and coconut milk. Locals traditionally eat them for breakfast or dinner. The one with an egg is an "Egg Hopper". You eat them by tearing off the crispy edges and dipping them into "Lunu Miris" (a spicy onion and chili sambal).

They are amazing. Also try the sweet version called "Honey Hoppers" or "Milk Hoppers" which have a dollop of sweet coconut cream at the bottom. Best breakfast ever.
