Coconut toddy is a highly traditional, slightly alcoholic beverage made from the naturally fermented sap of the coconut palm flower. When collected fresh early in the morning, it is sweet, cloudy, and mildly fizzy with very low alcohol content. As the day progresses, it ferments rapidly in the heat, becoming increasingly sour and much stronger. It is perfectly safe to drink, provided you buy it from a reputable, licensed local tavern rather than an unlicensed street vendor to ensure it has not been adulterated.
