I had an incredible breakfast containing crispy, bowl-shaped rice flour pancakes with an egg cooked in the center. What is it called and how do I eat it properly?

They are made from a fermented batter of rice flour and coconut milk. Try the sweet variation called Milk Hoppers (Kiri Appa) too, which have a thick dollop of sweet coconut cream in the middle!

Those are called Hoppers (or Appa in Sinhala)! The one with the egg is an Egg Hopper. You eat it by tearing off the crispy edges with your hands and dipping them into the soft egg center mixed with spicy Lunu Miris (onion sambal).
