Yes the curries at luxury tourist hotels are definitely heavily watered down regarding the spice level. They significantly reduce the chili powder and roasted spices to ensure foreign guests do not burn their mouths.

While the ingredients and cooking techniques are highly authentic and the quality is superb the heat profile is completely altered. If you want to experience the true fiery punch of real Sri Lankan food you absolutely must visit a busy local eatery or a small family run guesthouse.
