Homestays in the Kandy hills offer incredible cultural food. Ask your host to make fresh Coconut Roti baked over a wood fire, served with Lunu Miris (spicy onion and chili paste). Since you are in the tea country, ask for "Kahata" — plain, strong black tea brewed with fresh local leaves, usually drunk while biting into a piece of sweet palm jaggery (Hakuru).

Also ask for Kandyan-style jackfruit curry. The slow-cooked flavor is amazing in the cold hills.
