We want to stay directly on a working tea estate in Haputale Are there boutique stays or homestays that let you walk the fields

Yes! Look into places like the Thotulagalla Estate or Kelburne Mountain View. These are old British planter bungalows converted into boutique stays. You are literally surrounded by working tea fields. You can wake up, walk the established dirt paths through the estate, and watch the tea pluckers working in the early morning mist. It is the ultimate hidden gem hill country experience.

I stayed at a homestay near Dambatenne. Waking up to the smell of fresh tea processing is incredible.

Make sure they have a fireplace. It gets down to 12 degrees Celsius up there at night.
