Book through a registered agency that provides a contract and insurance. Avoid random guys at the airport exit. Ask your guesthouse; they want you to have a good trip so they will recommend drivers who have never given them trouble.
And confirm the daily price includes gas, driver accommodation, and food. Get everything in writing.
Check their "Tourist Driver" license (the yellow badge). If they don't have one, don't hire them.

Also, ask to see the car first. Check if it has working AC and seatbelts for everyone. If the car looks like it will break down, it will.
