I want to hike in the Knuckles range. How much English is spoken by locals in the remote villages?

In remote villages, English is very limited. Learn a few phrases like "Kohomada" (How are you) and "Isthuthi" (Thank you). It goes a long way.

Translation apps like Google Translate work well even offline. Just download the Sinhala language pack.
