Cheese kottu is a massive heavy profoundly delicious portion of very finely shredded flatbread vigorously mixed with melted processed cheese blocks fresh vegetables and incredibly rich spicy gravy. It is universally beloved for being incredibly intensely creamy and highly comforting.

Dolphin kottu despite the highly quirky misleading name contains absolutely zero dolphin meat. It uses vastly massively larger thicker chunks of flatbread almost resembling pasta pieces which are then drenched in heavily intensely spicy chicken curry gravy. It is usually vastly significantly spicier than the cheese version.
