Traditional ashram-style retreats will have strict curfews. However, in Mirissa, places like Saltia or surf-and-yoga camps cater exactly to this "balance" lifestyle. They offer daily guided flows and healthy breakfasts, but leave your evenings entirely free. They are located just a 10-minute walk from the main beach bars, so you can easily party and sleep in if you need to.

Look for "Surf and Yoga Hostels" rather than "Wellness Retreats". The hostels expect you to go out and drink.
