Arrack or toddy - what do we actually order so we do not look like the rum-and-coke table

Last south-coast night before Poya. Menu has Ceylon Arrack, Old Reserve, something called toddy, and a "safari" cocktail. We want the local thing, not a headache that ruins Sigiriya.

Arrack is the distilled coconut-flower spirit - order a known label, sip, ginger beer or soda is the local mixer, not six shots. Toddy is the fresh sap, lightly fermented, village, daytime, can be sour and can be rough if it sat. Do not buy roadside toddy from a random bottle at night. Poya Thursday the legal sale is off anyway.
