How reliable are tuk-tuk drivers at night and should I pre-arrange them?
I'll be out late some evenings. Should I pre-book tuk-tuks or just flag one on the street?

At night it's much safer and more reliable to pre-arrange tuk-tuks through your hotel or a trusted contact rather than flagging one on the street. Many hotels have regular drivers they work with who are known and accountable. Street hailing at night can be fine in busy tourist areas, but in quieter places or late at night it's better to have a known driver. Some areas have very few tuk-tuks after a certain hour. Pre-arranging also means you have someone expecting you and can share your expected arrival time with your accommodation. It's a small extra step that adds peace of mind.
Pre-arrange through your hotel at night. It's safer, more reliable, and drivers are accountable. Street hailing is fine in busy areas during the day but less ideal late at night.
