Does the express coastal train from Colombo stop at Ahangama station, or do I need to get off at Galle and take a bus.

Yes, most of the coastal trains going to Matara or Beliatta will stop at Ahangama. It is a main station for the surf towns. You do not need to get off at Galle. Just confirm with the station master in Colombo that your specific train is not a super-express that skips smaller stops.

Ahangama station is tiny, so be ready at the door with your boards before the train stops.

Taking boards on the train is much easier than the bus, but aim for a weekday. Weekends are packed.
