Palmyra toddy is a massive part of Jaffna culture. You will not find it in fancy restaurants. You have to visit the local "Toddy Taverns" (Kallu Thaavaram) on the outskirts of the city. It is generally safe if drank fresh in the morning before it over-ferments. Just be aware the taverns are very male-dominated and rustic.

Make sure you eat the spicy cuttlefish or crab curries they sell outside the taverns. Best food in the north.

I will ask my homestay host to point me to the best local tavern tomorrow morning.

Drink it before noon. By 3 PM it becomes very sour and highly alcoholic due to the heat fermenting the yeast.
