Hands-on Sri Lankan cooking class - south coast or hill country?

I love cooking and want to learn proper Sri Lankan home cooking. Should I do a class in Galle/Weligama or in the Kandy/Ella area?

Both are great but different. South coast classes focus more on seafood, coconut-based curries, and hoppers. Hill country classes include more vegetable dishes, sambols, and sometimes tea estate influence. If you want seafood and tropical flavors, do it in the south. For a broader range including up-country dishes, do one near Kandy.

Many guesthouses now offer excellent home-cooking classes where you go to the market with the cook in the morning. Much more authentic than hotel classes.
