Eating meat from tiny roadside stalls requires extreme caution. While the food is incredibly flavorful poor refrigeration during the intense daily heat is a massive reality. If you want to eat meat on the street you must strictly only buy from stalls that are completely packed with local customers ensuring massive turnover. Furthermore only consume meat that is chopped and heavily grilled at blazing high temperatures right in front of you like chicken kottu. If the meat looks like it has been sitting in a lukewarm display case all afternoon absolutely avoid it and order a vegetarian option instead.
