I want to eat the spicy, authentic Tamil food that the tea pluckers eat, not the toned-down tourist curries. Will homestay hosts in Haputale cook this for us.

Yes, but you have to explicitly ask for it! Tell your host "I want the real estate food, local spice level." They will happily make you incredible dishes like Ulundu Vadai, spicy potato curries, and massive plain rotis with fiery Lunu Miris. The estate Tamil cuisine is distinctly different and much spicier than standard Sinhalese rice and curry.

Many Hindu estate families are strictly vegetarian, but they cook with so much flavor you will not miss the meat.

Ask them to make you "Kothu" from scratch. Watching them chop it on the metal griddle is awesome.

Try the watalappam dessert if they have it, it is a jaggery custard.
