Galle has some good street food options but stick to busy stalls with high turnover. Freshly cooked is safer. Many tourists eat it fine. If stomach is sensitive, maybe start slow or stick to hotel/restaurant food first few days.

Yeah busy places are usually okay. Watch for cleanliness. I tell guests to try but not overdo if not used to it.
