Are the prawn fritters (Isso Vadai) at Galle Face safe to eat?

I see all these carts selling orange lentil patties with whole prawns pressed into them. They look amazing but sit out in the sun. Are they safe?

Yes, but the trick is to ask the vendor to re-fry them for you. They usually sit in stacks, but when you order, point to them and ask them to drop them back into the hot oil for a minute. The boiling oil kills any bacteria and makes them super crispy.

Go to the carts that have a line of local families waiting. High turnover means fresh food. And definitely get them with the chopped onion and lime juice topping!
