We are staying with a lovely family in Midigama. Is it polite to ask the host mother if I can stand in the kitchen and watch her make the coconut sambol.

It is more than polite, they will absolutely love it! Sri Lankan hosts are incredibly proud of their food. Ask her nicely, and she will probably hand you the scraping tool and make you grate the coconut yourself. It is a fantastic cultural exchange.

I did this and learned that the secret is using Maldive fish chips. You cannot make real sambol without them.

Just be prepared, the local kitchens are usually open-air and get very smoky from the wood fires!
